Ronnie Soak, beter bekend als “Chaos”, de vijfde ruiter van de Apocalyps. Ronnie stapte uit de band vlak voordat de “4 ruiters van de Apocalyps” doorbraken en bekend werden bij het grote publiek. Om deze ruiter te eren, brouwde Chaos bieren de Apocalyps 2022. Zwaar, donker en onheilspellend. Het einde der tijden is nog nooit zo bitterzoet geweest. Neem plaats bij de haard en geniet van het uitzicht op het einde der tijden dat op je afstormt.
Boy, oh, boy. What a week it's been. Curfews, riots, demonstrations, looting. Chaos brewers aren't happy about it.
They arel happy getting out of bed early on New Brew Day. So they can do what they love the most. Stirring in Chaos.
So they to make beautiful things. Beer. Today, version 2 of the Chocalade Raspberry pie is on the program. And that hat?
It doesn't fit us.
Fall is going to be good this year. Today we are making a whole fresh supply of Mr. Negativity does not like the sunny days. This will get us through the inclement days. Warm your bones with that. Don't thank us, we're happy to do it.
We've been busy. How much we have brewed. Meanwhile, beer 27 is in the keg.
From the 'Wiejese Weizen' to the 'Vodnik' A lovely fresh lager. On to 'Phooca' our Irish Stout. Followed by our End of Year beer 'Apocalypse 2019' a heavy Russian Iperial Stout. From there again through to the 'First Born' our spicy tripel.
We made these a two batches. One with grain yeast and one with liquid yeast. We are going for the grain yeast. It comes out better in the test. Praise from our testers. Then a blond beer 'Peculiar Blond' and it certainly became peculiar. The grain yeast won again in this one. This one still has to endure a test round. We are already happy with it.
From there on to 'Sickly Sweet' a Milkshake New England I.P.A. Is still fermenting in the bottle but we have high hopes. Last Sunday 'So Sorry' was bottled. This was supposed to be a Weizen but yours truly, being choatic, used the wrong malts. That kite did not work anymore. It has become a Saison.
And lastly to usher in or end autumn. Heather's Autumn Tree' an American Amber with Maple Syrup as an addition. Still lagering so no conclusions about the taste.
May 12 was the day of the competition. A great day. Talked a lot with fellow brewers and learned a lot. Beer sommelier Arvid Bergström was flown in to judge the beers (11 in total). In the meantime, we were treated to some tasting beers, a snack and a tour of DAVO's brewery.
The tension was mounting. Do we stand a chance? Will our "Come unDONe" be taken seriously? Or will it be spat out and we be disbarred for life?
Finally, the redeeming answer. All the beers were good in color, aroma and taste. Should they be for sale, the Sommelier would want to drink them again. For us a big compliment. The confirmation that we had made a good beer. And that's what we did it for.
Then the big question. Did we win? Were we in the top 3? No. Of course we weren't. Our "Come unDONe" was nowhere near DAVO's "the DON". We already knew that and a podium place was therefore already an illusion. And the top three were indeed very close to that original. (Yes we could taste them ourselves).
What remained was a very nice day, talking with fellow brewers, exchanging tips and most importantly receiving compliments on our beer and our label design.
Yes indeed, another competition in the neighborhood. Grand Café Zuijdt in Zwolle is having its second edition of the bierproevement.
Chaos brewers couldn't resist the urge to put down their version of a Weizen here. A beautiful summer wheat beer with a sour finish. "Nur vom besten" brewed. Delicious for the summer days.
May 25 around six o'clock the verdict falls. We already find the suspense unbearable.
Chaos Brewers enter Davo's Clone contest to recreate their The DON.
For us chaos brewers, that meant a real challenge. Started by brewing a Russian Imperial Stout (R.I.S.). Added lots of barley, chocolate, coffee and vanilla. This resulted in a nice, heavy and thick beer. Then added different amounts of whiskey in different batches. What do you say, Matured in oak? Why not. Then we just waited. Will it be alright? And yes, it is. A beer worthy of Chaos. Is it the DON? No, definitely not. Is it flavorful. It certainly is! Hence, Chaos Brewers has given the name come unDONe to this beer. Too much of this and your soul unravels.
May 12 is the day. Then the verdict of the brewers of DAVO will come down. We'll just have to squeeze our butts together for a little while longer.
